| Seared Scallops |
Wash the scallops. Place them in a bowl and drizzle over a tablespoon of olive oil, and chopped garlic. Toss them gently until they are coated in oil. Heat a frying pan over a medium-high heat. When the pan is hot, put in some of the scallops and garlic (do not crowd the pan - cook in two or three batches) and cook them on both sides for a few minutes until just cooked through. Season with salt and pepper, lemon juice, finely chopped parsley, and serve with your choice of pesto. |
