| Dukkah Fish Fillets |

This is a super easy exotic recipe using Dukkah (originally from Egypt this is a mixture of herbs, nuts and spices). We don’t have the exact ingredient quantities but we trust your cooking skills! Another quick and ‘summery’ way to cook fish with Dukkah is to dip washed fish fillets (Gurnard, Tarakihi, etc) in the dukkah and fry in olive or macadamia oil and serve with salad. Ingredients:
Wash the fish fillets, slice the lemon and the onion. Lay out the foil. On the foil place the lemon slices then place the fish over these. Sprinkle the dukkah over the fish then lay more lemon slices and the onion slices over the fish. Pour the coconut cream over (enough to cover the fish). Sprinkle salt and pepper. Fold the foil over to cover and bake in the oven till the fish is cooked through (about 10-15 mins depending on thickness of fish). Serve with jasmine rice and our Greek Coleslaw (for a real international mix). |
