| Baby Octopus Spaghetti |
Slice onions and slowly cook in olive oil with lid on until carameralised (30-45 minutes), add baby octopus and toss it through for 5 minutes, add 1 cup (or more) of brandy or medium sweet white wine. Season with salt & pepper. Cook for 5 or so minutes. In the meantime boil spaghetti in salted water, drain, and drizzle olive oil through. Mix the baby octopus sauce through the spaghetti, add more salt and especially pepper. Simple but so delicious!
