Greek Garlic Prawn Spaghetti - Family Recipe
  • 12 Whole Raw Prawns, peeled & cleaned 
  • 1 cup chopped Parsley
  • 4 large cloves Garlic, chopped
  • 1 Tbsp Minced Garlic (Nanric Road in store)
  • 1-2 Spring Onions, chopped
  • 1/2 packet Spaghetti
 
Wash prawns and marinate in minced garlic one hour prior to cooking.

Fill a large pot with water. Add lots of salt and bring to boil. When boiling, throw in spaghetti and simmer until cooked.

Fry garlic in hot oil and remove from oil when garlic turns golden brown. Add marinated prawns and parsley. Season and add chopped spring onion and a few tablespoons of spaghetti water to prawn mixture, enough to resemble a sauce. Cook for a further few minutes until prawns turn white and sauce thickens slightly.

Drain spaghetti and return to pot. Drizzle olive oil over spaghetti and add salt and pepper. Add prawn sauce and toss.

Serve with grated Parmesan cheese if desired.
