Greek Bean Stew


  • Olive Oil
  • 1 tsp Garlic (Nanric Road Minced Garlic in Store)
  • 1 Red Onion, thinly sliced
  • 400g can chopped Tomatoes
  • 1 Tbsp Tomato Paste
  • 400g Cannellini Beans or Butter Beans 
  • 2 Courgettes
  • Feta Cheese

Fry oil, garlic and onion till soft. Add tomato paste and chopped tomatoes and courgettes. Bring to the boil. Then turn down heat and simmer for 5 or so minutes. Add beans and simmer.

Serve in bowls and crumble feta over the hot beans so feta melts slightly. Serve with warm ciabatta bread.
