How to Sear Perfect Scallops

  • To sear scallops they must be dry first and the pan must be hot.
  • First dry your scallops and season with salt. You will be searing the scallops in small batches so as not to crowd the scallops or cool down the pan. 
  • Heat the fry pan and add 1-2 Tbsp butter and 1-2 Tbsp oil (depending on how big your pan is).
  • Once this is nice and hot add your small batch of scallops on the flat side.
  • Do no touch while scallops create a crust. Once crust has formed in around 2 minutes turn over and wait till crust forms.
  • Serve in a Seafood Platter, as a starter, with your fave pasta or salad.
